The old expression says “you’re better safe than sorry.” Listen to it. Handshakes don’t usually stand up in court, although technically any agreement is supposed to. But you can’t prove a handshake. Words on paper are less likely to be misconstrued. Of course, while a formal contract is the best way to go if you can afford it, a letter of agreement is still written proof. Please, put everything in writing!!
